Vineyards in the municipality of Barolo and Serralunga.

36 months in oak barrel plus 6 months resting in the bottle.

ORGANOLEPTIC CHARACTERISTICS: 

Color 

Garnet red with orange highlights.

 

Aroma

Complex, Intense and ampler floral bouquet aromas of red rose and sweet violet, followed by a mix of fruitiness aromas starting with strawberry jam, cherry and raspberry along of ample spice notes of dark chocolate, vanilla, cloves and sweet liquorice, fallowed by ethereal aromas and a touch of leather along by delicate exotic herbs like rosemary and cedar, finishing in a sublime oaky taste        

 

Taste

Full bodied, dry, warm and velvety through pleasant acidity along a harmonious tannic balance, minerality and moderately fresh followed by a great persistence in the mouth consolidated with a sophisticated savoury tannic finishing. This is a perfect  structure wine for ageing with great longevity capacity, increasing the taste character of the evolution. 

 

Paring food 

It goes perfect with important and finest gourmet courses like poultry dishes as feathered game such as partridge, pheasant, wild duck and pigeon and  roast goose:  meat dishes as raw beef or veal prepared the Piedmontese way - or steak tartare, braised beef in Barolo (brasato al Barolo), grilled fillet beef or  pork, grilled venison;  Rice and pasta risotto porcini or truffled pasta; Old strong (crumble) cheeses like Parmigiano Reggiano, Pecorino Vecchio, Old Gouda and Mature Cheddar, blue cheeses such as Gorgonzola, Danish blue and Castelmagno as well as cheeses with a rich flavor like Fontina and Boschetto al tartufo.
